As a rule, coffee is known for its bitterness, which often results from dark roasting. In many cases, coffee is roasted dark to mask undesirable flavors.

In reality, coffee is a fruit, and it doesn’t have to be bitter at all. Grown on trees, coffee cherries have a naturally sweet and mild taste, resembling grapes in shape. At its best, coffee can carry the delicate aromas of berries, cherries, peaches, or other fruits.

In 2016, an idea was born—along with a strong desire—to make high-quality, distinctive coffee accessible in Georgia. This is how Coffee Lab was created—the first specialty coffee company in the country, built on a core principle: to craft the highest-quality coffee that is available to everyone.

At that time, this approach was a completely new vision for coffee supply—selecting and importing the finest green coffee beans, roasting them locally, and finally, preparing them using various brewing methods. It was a major challenge for our team, but we were committed to gaining the best knowledge and experience in sourcing, processing, and brewing coffee.
